Happy Healthy Pancakes

Who doesn’t love pancakes?! They are our ultimate breakfast choice and we eat them whenever we can! We’ve developed this healthier version to our usual American style so that we can enjoy a fat stack knowing that we’re also fuelling our body with some good stuff to keep us energised for hours.

The massive bonus is that you also only need 3 ingredients! You can pimp them up however you choose but in terms of the mix all that’s required is:

4 tablespoons of porridge oats

I egg

1 ripe banana

*amounts are per pancake eater - pic shows how much you need to feed two

Pop all 3 ingredients in a blender (we use a nutribullet but anything that gives a good mix will do) and … blend. Heat up a little oil in a large frying pan - coconut oil is nice, olive oil also works a treat. Pour out your mix into 3 pools of pancake loveliness. Here’s the important bit - turn the heat down! These babies cook super quick so it’s essential to turn down the heat while they set and cook through so you can do your thing and flip. When they will hold (after about 1 minute), slide your flipper underneath and turn each one over. Then, you guessed it, let the other side cook through. I like to turn them a few times at the end to ensure a gorgeous sizzling golden brown colour and then, I stack them on the plate.

Now the bonus fun part … decorating your stack. Our favourite topping is chopped banana, strawberries and blueberries with a hearty drizzle of maple syrup. Bacon would also go down a storm. If I’m feeling it I might choose some coconut yoghurt or peanut butter - the choice is yours!

Another bonus to this basic recipe is that you can add seasonal flavours or extra nutrition. Cinnamon and apple is delicious at this time of year and a scoop of protein powder can easily be included. If the batter becomes a little thick you can simply add milk or yoghurt until you get the perfect consistency.
